In a very limited edition, I imagined this signature creation as an elegant, playful and gourmet gift to be shared anywhere, at any time! Opening its pretty box and discovering this composition of two individual cakes and a chocolate bonbon for two is an invitation to take the time to get together between sweet words and delicacies.
Because a gift is a very personal attention, to create our original moulds, I hand-modelled the shapes of the entremets as well as the chocolate bonbon, so that the few irregularities in the gesture express the sweet sensuality of the feelings.
The half-heart brush up against each other, each like an individual cake, revealing the light harmony of the vanilla and pecan flavours, enhanced by the freshness of the grapefruit. The edible flowers make you want to peck away, like an interlude. In the centre, the chocolate bonbon invites you to prolong the pleasure, to voluptuously savour each mouthful.
Entremets: pecan crisp. Mousse infused with grapefruit zest. Vanilla crémeux. Grapefruit compotée. Homemade 100% pecan praliné. Edible decoration: cigarette tuile flowers, small marzipan flowers.
Chocolate bonbon: 72% cocoa chocolate shell. Crispy feuillantine. 66% chocolate ganache. Sparks of chocolate crunch and caramelised pecans.
Dessert for 2 to share.

Composition : chocolate shortbread. Soft hazelnut biscuit with whole hazelnut sparks. 53% cocoa chocolate mousse. Homemade flowing praline with 100% French hazelnuts. Edible decor: chocolate ganache, hazelnut chocolate fondant heart, 72% cocoa chocolate glitter heart.
