Freshness, lightness, creaminess, delicacy, the Fraisier is the ultimate summer dessert. It has the taste of shared moments and for the Chef Nina Métayer, the one of her birthday cake. Fraisier as a tiered cake style from 13 people onwards, by estimate only.

Biscuit Pain de Gênes gluten free with rice flour. Light vanilla elderflower diplomate cream. Chantilly. French strawberries. Elderflowers according to availability.

This sweetness is back for the warmer weather in an even gourmet version, with stronger flavours and a coconut coating that gives it even more just a texture, this regressive little more soul, evoking memories of childhood. The crispy sweet pastry. The roundness of the coconut mousse and the Chantilly, like a little cloud. The deliciously fruity-sour flavour of the compotée. The freshness of fresh raspberries… Everything evokes the spirit of the summer holidays.

Nina Métayer X Marie Brizard®

Elderflower liqueur sublimates the deliciously fruity, delicately tart-sweet tastes of strawberry and rhubarb. Light, round and fresh, this elegant dessert awakens the senses with its interplay of textures and subtle palette of flavors.

Crispy with millet seed and crushed whole roasted almonds. Cookie pain de Gênes with almonds. Strawberry compotée, roasted rhubarb, fine brunoise of raw rhubarb and hint of elderflower liqueur*. Light mousse with flower honey, Madagascar vanilla and elderflower liqueur*. Elderflower Chantilly. Fresh strawberries, poached rhubarb, elderflower liqueur jelly*. *Marie Brizard®.

The Flower

Apricot melilot

In this new version, the elegant delicacy of our Fleur plays a fine sensory sheet between its feature play of textures and its very summery flavours. The slightly acidulous roundness of the apricot compotée combines with the gentle milky freshness of the mousse and the herbaceous, vanilla notes of the Mélilot to evoke beautiful summer days in the countryside.

Crispy with millet seeds and whole roasted crushed almonds. Pain de Gênes biscuit with almonds. Light mousse, milk infused with melilot*. Apricot compotée with honey and vanilla. Decor velvet effect. *Dried leaves and flowers Nomie Épices.

The crispy sweetness of Meringue. Minty Chantilly. The roundness of cooked yellow fruits with a hint of Tonka. The fresh juiciness of peaches and nectarines… In this new version, our signature Pavlova offers a concentrate of deliciousness that evokes the sun at the heart of summer.

Crisp Swiss meringue. Lightly acidulated almond biscuit, gluten-free* only for 6- and 8-person sharing formats. Compotée of yellow and white peaches with Tonka beans. Chantilly with cream infused with fresh mint. Fresh fruits: white peaches, yellow peaches, nectarines. Seasonal sprouts and edible flowers.
