Cherries pistachio Tarte
Cherries has the taste of summer, this one of shared picking around the cherry trees. The interplay of textures evokes gourmet memories: the freshness of the fruit picked from the tree, the round, comforting smell when it comes out of the oven, the crispness of a sweet pastry that melts in your mouth... Combined here with pistachio, between the roundness of almond cream and the unctuous sweetness of a light cream.

Sweet pastry with raw almond powder. Almond cream with pistachio*, roasted chopped pistachios and Morello cherries. Light pistachio cream*. Fresh cherries fried in PDO butter. Cherry confit. Fresh cherries. Hint of fleur de sel. Slivers of grated pistachio. *Kalios pistachio paste.
