Crunchy pâte sucrée made with T55 Moulins Viron flour and Charentes-Poitou PDO butter. Thin layer of almond cream. Crémeux with organic yuzu lemon coulis. Point of confit with citrus fruits of the moment. Light and puffed Meringue with citrus zest.
