Composition
Crunchy pâte sucrée made with T55 Moulins Viron french flour and Charentes-Poitou PDO butter. Thin layer of almond cream. Crémeux with organic yuzu lemon coulis Agrumes Bachès. Light Meringue soufflé with citrus zests.
