Composition

Puff pastry made with T80 and petit épeautre flours from Moulins Viron, and Charentes-Poitou PDO butter. Almond frangipane with Xaymaca Special Dry old rum from Plantation Rum.

Tips

  • Storage: you can keep your cake for 3 days at room temperature (do not store in the refrigerator).
  • Chef Nina prefers it unheated, but the galette can be eaten at room temperature or warm, depending on your preference!
  • Reheating: preheat your oven to 160°C, then, depending on your oven, heat the cake for a maximum of 10 minutes at half-height on the grill or the baking sheet covered with a sheet of baking paper. Before eating, leave to cool for 6-10 minutes to obtain a crispy exterior and a warm, delicious interior.
