This year, to celebrate Epiphany in style, Nina Métayer is offering three different galettes based around her new signature puff pastry, delicately crumbly and melt-in-the-mouth, made with quality French flour and the Charentes-Poitou PDO butter she has loved since childhood. If the chef prefers to eat the galette at room temperature, it can be gently reheated by following her advice.

From Friday 5 to Wednesday 28 January 2024.

From the Christmas Snowflake to the Flocon des Rois, our signature galette is a link in the theme of our collection dedicated to the end-of-year festivities, with this elegant decoration evoking the festive magic of winter and the pleasure of shared gourmet moments.

The subtle aromas of citrus fruit, the character of bergamot and candied citron reveal the flavours of this creation, which requires meticulous craftsmanship between the two-stage baking of the two tiles that make up the flake and the hot shaping to give it volume.

Puff pastry made with Charentes-Poitou PDO butter and T55 French stoneground flour from Moulins Viron. Almond frangipane with hints of lemon, bergamot and candied citron. Hint of fleur de sel. Snowflake decor : caramelised “tuile cigarette” dough.

To share for 8 people.

The quest for balance and harmony inspired this creation, which transports us like the flutter of a wing into a world that’s as delicious as it is unique. The smooth frangipane and the delicately crunchy texture of the seeds makes you want seconds is sure to delight young and old alike! The bird delicately evokes a new flight, a new year and the promise of nature’s awakening.

Puff pastry made with Charentes-Poitou PDO butter and T55 French stoneground flour from Moulins Viron. Almond frangipane with buckwheat, linseed, millet, pumpkin and sunflower seeds. Bird: caramelised “tuile cigarette” dough cigarette tile.

Dedicated to fans of the authentic galette, with just a hint of exotic amber, it’s an invitation to share some delicious moments again and again throughout January.
