Nina invites us to share her childhood memories: the smell of the Christmas tree, the pleasure of decorating it with the family, the moment when we choose the most beautiful ornament, the one that sparkle inside the eyes of young and old alike. Designed as a delicate chocolate crafted piece and as a precious gift delicately placed in the centre of the table to enhance festive meals. Beneath the regressive milk chocolate sphere with colourful hand-painted motifs lies a refined dessert with flavours that awaken the senses, including notes of citrus, gingerbread, honey, passion fruit and cinnamon berries. Prolong the tasting experience by breaking the chocolate base of the ball, which hides little treats to share!

The dessert to share: Crispy shortbread made with traditional French flour*, muscovado sugar, white almond chocolate**, praliné, hazelnut and almond powders. Moist gingerbread-style biscuit, orange and lemon zests, Christmas spices, flower honey, Charentes-Poitou AOP butter. Compotée of candied mandarins and passion fruit. Crémeux with infusion of cinnamon berries*** and Madagascan vanilla. Ganache mounted with chestnut honey. Decoration: milk chocolate, cigarette tuile; gold powder. *Moulin Viron. **Linnolat. ***Terre Exotique. The Christmas bauble: milk chocolate shell hand coloured with a brush. The base of the Christmas bauble: small treats (Christmas fritters and mendiants) in 70% dark chocolate hidden under a chocolate shell to be broken.

Christmas bauble: dessert for 10 people and chocolate to share. Approximately 2.4kg (1.5kg of chocolate), 22cm Ø x 24cm.

The crispyness, a soft biscuit, unctuous Crémeux, light mousse, praliné, aerial Chantilly cream… This concentrated treat plays with textures to enhance the exceptional range of flavours of pistachio in all its forms.

Pistachio crisp, a pinch of Guérande fleur de sel. Light pistachio mousse. Pistachio cream. Pistachio praliné. Pistachio Genoa cake. Decoration: pistachio Chantilly cream; green velvet; pistachio powder; white chocolate. *Iranian pistachios (whole, crushed, powder) sourced by Grégoire Bosquet.

A crispyness with notes of toasted coconut, a soft biscuit, the freshness of the compotée, the juiciness taste of fresh mango, the roundness of the coconut mousse and the vivacity acidulated of the lime… This log plays with exotic flavours that make us dream in the heart of winter, transporting us to the tropical sun.

Crispy lace crepes, coconut powder, millet seeds, white coconut chocolate* and a hint of fleur de sel. Soft almond and coconut biscuit. Mango and passion fruit compotée, diced fresh mango. Light coconut mousse. Decoration: white chocolate icing; lime ganache, lime zest; white chocolate. *Linnolat.
