The light citrus notes of the bergamot Brémeux, Earl Grey and lemons-zests praliné bring a springtime freshness to this deliciously chocolaty, highly indulgent dessert that play with a palette of textures between roundness and crispy.

Composition

Crispy with feuillantine, 70% dark chocolate, praliné and a hint of fleur de sel. Chocolate and almond Sacher biscuit. Homemade praliné with zests of lime and yellow lemon*. Bergamot Crémeux. Mousse with Earl Grey from Comptoir Français du Thé and two chocolates 66% dark and 40% milk. Dark chocolate flocking; gold and bronze powders. Dessert to share only: Esmeraldas 66% dark chocolate petals from the Cacaosphère. *Inside the dessert to share and in the center of the individual flower.
