My home town, my departure for Mexico, my early years, my home port... Part anchorage, part invitation to travel, the port city of La Rochelle is my compass, the one that keeps me on course and helps me to fulfil myself. I loved transcribing, with a delicate play of edible tiles, the elegance and fragile balance of its lines inspired by the instruments of the navigators of yesteryear. In harmony, the flavours of the traditional galette des rois emerge with the cocoa powders and grits that evoke the South of America, and the buckwheat from Asia.

Puff pastry made with T80 and petit épeautre flours from Moulins Viron, Charentes-Poitou PDO butter and Crimson Red and Terra Rossa cocoa powders from Deezan. Traditional frangipane with caramelised cocoa nibs. Crunchy almond and buckwheat praline. Deezan True Gold cocoa tuile, dark chocolate flock, gold powder.
Allergens: gluten, milk, eggs, nuts.
