« The compass » the 2025 signature galette des Rois

My home town, my departure for Mexico, my early years, my home port... Part anchorage, part invitation to travel, the port city of La Rochelle is my compass, the one that keeps me on course and helps me to fulfil myself. I loved transcribing, with a delicate play of edible tiles, the elegance and fragile balance of its lines inspired by the instruments of the navigators of yesteryear. In harmony, the flavours of the traditional galette des rois emerge with the cocoa powders and grits that evoke the South of America, and the buckwheat from Asia.
Galette for 6 persons.

Composition
Puff pastry made with T80 and petit épeautre flours from Moulins Viron, Charentes-Poitou PDO butter and Crimson Red and Terra Rossa cocoa powders from Deezan. Traditional frangipane with caramelised cocoa nibs. Crunchy almond and buckwheat praline. Deezan True Gold cocoa tuile, dark chocolate flock, gold powder.

Tips
- Storage: you can keep your cake for 3 days at room temperature (do not store in the refrigerator).
- Chef Nina prefers it unheated, but the galette can be eaten at room temperature or warm, depending on your preference!
- Be careful, if you heat the galette with its tile, the tile will soften in the heat and lose its volume as it flattens to the shape of the galette.
It is not always possible to remove the crown tile without breaking it, as it may be stuck to the cake by the sugar. - Reheating: preheat your oven to 160°C, then, depending on your oven, heat the cake for a maximum of 10 minutes at half-height on the grill or the baking sheet covered with a sheet of baking paper. Before eating, leave to cool for 6-10 minutes to obtain a crispy exterior and a warm, delicious interior.
