Apricot Tart


The taste of the fruit baked with the puff pastry is reminiscent of homemade summer tarts. The notes of verbena and the freshness of the raw apricots enhance these comforting flavours with elegance.

Puff pastry made with Petit Epeautre and T80 flours from Moulins Viron and Charentes-Poitou PDO butter. Light almond cream. Apricots cooked on the tart, butter, brown sugar, fleur de sel. Verbena leaves. Fresh apricots. Forest honey. Roasted almond slivers.
