Spring Wreath


The elderberry* comes from my Norman garden where it grows in profusion. The rhubarb* comes from the Peltier garden, the committed market gardener where I do my farm market when I am in Normandy. To preserve its authenticity, I chose the rustic character of Khorasan, an old variety of wheat grown in France by Moulins Viron and the Charentes-Poitou PDO butter of my childhood. *Sourcing can evolve according to what nature offers us.

Shortcrust pastry made with Khorasan flour. Almond cream. Rhubarb and elderflower compotée. Almond Chantilly. Crunchy rhubarb. Edible flowers.
